I am laughing at my breakfast today after realizing it's Fat Tuesday! Too bad for having an empty refrigerator! I'm choking down plain low fat yogurt (BRAIN FOOD) while the rest of the world indulges in fat. Happy Marti Gras!

Day 41: So, this happned...

Well, this is pretty funny. After baking with my little girls last night, I continued on with my baking frenzy into today and thought I could just toss my dark-chocolate-raspberry-banana-bread right in the oven too (underneath some already-baking-brownies.) CLEARLY, I forgot to notice the small height difference between the oven racks... ummm. OOPS. Very lucky for me, I caught my mistake with about 15 minutes left so I was able to pry the delicate bread off of the wrack and give it freedom and time to rise before becoming completely smashed. End result: You would've never known. :) #liveandlearnfolks

Day 40: Winter is still.

There is nothing like starting out a Saturday with a brisk walk and cute puppy paws for company. Winter is so beautiful, especially during mornings when everything. feels. so. still.

Day 38: Healthy Carbs

With my diet "healthy" carbs is pretty much an oxymoron so it is kind of amazing I've become a fan of Quinoa. I've been sticking to the best Runner's food to make the most of my "training" and Quinoa was on that list! On top of studying I've been doing a little cooking to break up the day.
You'd be surprised at how many interesting recipes you can make with this tiny grain as the main ingredient. And to top it all off, most Quinoa recipes will never take more than 15 minutes. 
This is what happened when I had "NOTHING in the fridge." Six ingredients: Quinoa, avacado, red pepper, black beans, pepper, and olive oil. Not bland at all!
Fun fact: Not only is Quinoa a healthy carbohydrate like I mentioned, it is also a muscle building protein; it contains 8 amino acids that the body requires to put the protein to good use. If you find yourself needing more protein in your diet, like me, Quinoa is a great side dish option.

It was so fun surprising her at her dorm and seeing her still glowing with excitement about Greek life and the Sibs. I've been waiting for this day for a longggg time and I couldn't be happier that she decided to go SIB! :) So proud of her.

I made it back to Holland this evening for the first time since I graduated. I cleaned out my nursing mailbox today and picked up my last few assignments. It's a weird feeling stopping by after being on the other side. I couldn't help but snap a picture of this hallway... so dear to my heart.  :)

Day 33: Multi-task

This is harder than it looks! I had this great idea of reading while getting some miles in.  I used to do this in college all the time... on a bike.

Running long distances on the Tredmil is hard enough, 
I think I'll stick to TV entertainment/distraction.

Day 32: 1 month down

How is it already February? This past month seemed to move so. painfully. slow. and now that it is over I am measuring my productivity. Post-holiday come downs and new years resolution frenzies are contagious I've decided and mostly leave you feeling less accomplished than you felt on Jan 1. In my case, this may be post-grad problems!
So, I want February to feel different and fresh, a month of its own. To not measure my accomplishments on a short term/day-to-day basis, but long term. And by long term, I mean one month. Check back with me next month and I'll let you know how that is working out. ;) Tonight, my fortune cookie ACTUALLY read, 'the road to knowledge begins with the turn of the page.' OKAY. As if I didn't need more incentive to keep my head in a text book. Alright February, Ready, set, go?
